GASTRONOMY AND LOCAL PRODUCTS
The mountain is the soul of the culture, customs and folklore
of the Pistoiese Apennines and which leaves traces in the food.
The dishes which you can try in the Abetone and its surroundings
are prepared with products from the forest. The chestnuts are used
for several typical dishes, such as the chestnut flour for the sweet
"castagnaccio", while the delicious berries which are
collected in the summer, such as the blueberries and the raspberries,
are used to make marmalades, liquors, drinks, cakes and other sweets.

If
you like mushrooms you will find it hard to leave the table as the
mushrooms are used everywhere, from appetizers, sauces for the pasta
to side-dishes. The pasta dishes are excellent, but you have to try
tortelli filled with potato, perhaps with a fresh pore mushroom sauce.
In some areas of the mountain it is a tradition to make chocolate,
while you can buy bottled tomatoes, mushrooms, sauces, and vegetables
in oil or cold cuts everywhere to take home. The locals know everything
about the flora of the mountain and it is thus understandable that
there are lots of herbalist's shops where you find teas, creams and
other body products made of natural ingredients. |
